    그러나 이렇게 일상생활에 깊숙이 들어온 차가 무조건 좋은 것을 아닐 겁니다. 왜냐하면 차에도 유통기간이 있기 때문입니다.  찻잎을 장기간 방치하게 되면 상할 수 있습니다. 혹시라도 유통기간이 지나 변질된 차는 직접 사서 마시거나, 선물로 주거나 할 수는 없습니다.

     그렇다면 6대 차(녹차, 백차, 황차, 우롱차, 홍차, 흑차)의 유통기한은 얼마나 될까요? 개봉하지 않은 유통기한이 지난 차를 마셔도 될까요?

    1. 6대 차의 유통기한은 어떻게 될까?

    ● 녹차 : 6대 차 중에서 유일하게 발효되지 않은 차로 가장 많이 생산되고 소비되는 차입니다. 일상생활에서 대부분의 사람들이 녹차를 마시는 것을 좋아한다는 것은 모두가 알고 있습니다. 유통기한의 관점에서 볼 때 녹차는 유통기한이 가장 짧으며 일반적으로 약 1~1.5년 정도만 보관할 수 있습니다. 잘못 보관할 경우 보관기간이 단축되며, 아직 유통기한이 지나지 않았더라도 산화변질 및 곰팡이가 발생할 수 있어 주의해야 합니다.

    ● 황차 : 황차는 6대 차 중 인기와 생산 및 판매 측면에서 가장 선호도가 떨어집니다. 그러나 황차를 좋아하는 사람들은 황차가 맛이 좋고 영양가도 높아 선택할 가치가 있다고 생각합니다. 황차의 공정은 녹차와 매우 유사하나, 차이점은 무황변 공정을 추가하여 발효하지 않은 차에서 약한 미(微)발효차로 변화시키며, 차의 색이 황색을 띠고 단맛이 높아진다는 점입니다. 유통기한은 기본적으로 녹차와 동일하며 약 1년입니다.

    ●  우롱차 : 우롱차는 녹차와 홍차의 중간 발효차로 발효 정도는 20%~70%로 품질 특성이 서로 다른 반발효차를 형성합니다. 우롱차는 남부 복건 우롱, 북부 복건 우롱, 대만 우롱, 광동 우롱의 네 가지 범주로 나눌 수 있습니다. 일반적으로 우롱차의 유통기한은 18~24개월인데, 예를 들어 향기로운 철관음은 저온에서 냉장고에 보관해야 하며 유통기한은 2년 이상이 될 수도 있습니다. 일부 심하게 로스팅된 숙성된 찻잎은 유통기한이 5년 이상일 수도 있고 그보다 더 길 수도 있습니다. 예를 들어, 숙성된 철관음과 숙성된 무이암차가 있습니다.

    ● 홍차 : 홍차의 유통기한은 모두가 생각하는 것만큼 길지 않습니다. 홍차는 발효도가 높은 발효차이지만 그 모든 변화는 전체 가공 및 생산 과정에서만 존재하며, 일단 건조 및 생산이 완료되면 홍차는 계속해서 발효되지는 않으나 품질 특성이 향상됩니다. 시간이 지나면서 변하기도 하고 천천히 지나가기도 하고 떨어지기도 합니다. 따라서 일반적인 상황에서 홍차의 유통기한은 2~3년입니다. 3년을 넘으면 품질이 점점 더 빨리 떨어지며, 그 해의 새 차만큼 맛이 좋지 않습니다. 어떤 종류의 홍차라도 5년이 넘었다면 유통기한이 지난 것이므로 계속 마시지 않는 것이 가장 좋습니다.

    ● 백차 : 원래는 6대 차 중 황차와 같은 틈새차였으나, 최근에는 장기간 보관이 가능하고 유통기한이 긴 특성을 가지고 있어 백차가 시장에서 점점 인기를 끌고 있습니다.. 옛말에 차는 1년, 약은 3년, 보물은 7년이라는 말이 있습니다. 따라서 백차의 유통기한은 10년 이상이 될 수 있으며, 오래될수록 좋습니다. 물론 모든 차의 변형은 좋은 보관 조건에서 이루어져야 합니다. 차를 잘못 보관하면 10년은 고사하고 1년만 지나면 맛이 변질되어 더 이상 마실 수 없게 됩니다.

    ● 흑차 : 흑차는 6대 차 중 가장 특별한 종류의 차입니다. 그것은 흑차가 후발효차로 장기간 보관 및 발효가 가능하기 때문입니다. 이런 현상은 녹차, 백차, 황차, 홍차, 우롱차에는 없는 것으로 이들 차는 생산이 완료되면 그 후에는 품질이 계속 향상되지 않고 서서히 떨어지기 때문입니다. 하지만, 흑차는 생산을 완료한 이후에도 오랫동안 적합한 환경에서 보관한다면 자연스럽게 발효가 진행되어 차의 성질이 좋아집니다. 이렇게 발효된 찻잎은 더 나은 음용 경험을 제공할 수 있으며, 품질 특성과 가격 모두 직선적인 상승세를 보이게 됩니다.

     따라서 흑차의 유통기한은 일반적으로 무기한이라 할 수 있습니다. 하지만 이것은 무제한을 의미하는 것이 아니라 차의 보관 상황에 따라 달라질 수 있습니다. 일반적인 상황에서 10년 이상 보관한 흑차는 최적의 음용기에 접어들기 시작합니다.

    2. 유통기한이 지난 차를 마셔도 될까?

    앞서 말한 바와 같이 차에는 고유한 유통기한이 있으므로 일반적으로 유통기한 내에 마시는 것을 선택해야 보다 안전합니다. 하지만 실제로는 유통기한이 지난 차를 버리는 것을 꺼리고 계속해서 마시는 사람들이 많습니다.

    현재 시중에는 두 가지 종류의 차가 있는데, 하나는 브랜드 포장 차로 포장 겉면에 차의 유통기한이 나와 있습니다. 해당 보관조건에 따라 차를 잘 보존하면 유통기한 내에 마시는 것은 당연히 문제가 없으나, 유통기한이 지난 경우에는 잘 개봉하여 확인하시면 됩니다. 유통기한이 많이 지나지 않은 것은 선택해서 드셔도 됩니다. 하지만 유통기한이 많이 지난 것은 마시지 않는 것이 좋습니다.

    누구나 가장 많이 접하는 또 다른 상황은 찻집에서 소포장으로 담아 파는 것을 구입한 경우입니다. 이럴 때는 찻잎의 유통기한과 생산일이 표시되어 있지 않는 경우가 많습니다. 그러므로 찻집에서 소포장으로 살 때는 구입일을 겉면에 적어 놓는 것이 좋습니다. 이런 차는 잘 보관했다면 빨리 마시는 것이 좋은데, 위에서 언급한 6가지 차의 유통기한을 비교하여 대략적인 추정을 할 수 있습니다.

    녹차를 예로 들자면, 올해 신차를 지금 구매하시면 생산일자는 당연히 3~5월이 될 것이며, 유통기한 1년 기준으로 다음 해 이때까지 유통기한이 남아있지는 것입니다. 이 기간 동안 보관만 하면 안심하고 드실 수 있습니다.
